Smoked Turkey Melt Sandwich

I learned this sandwich while I was living in Michigan. Soon after I moved back to OK, I introduced this sandwich to my Sous Chef and Exec. Chef. At first, they didn't think it would be good, until they tasted it, and loved it!

Yields: 1 sandwich

1/2 granny smith apple, cored and sliced 1/4"
1/2 red onion, peeled, julienned
2 T oil or butter
2 - 3 T mayo
1 T fresh sage, minced
-or- 1 t dried rubbed sage
2 slices Texas Toast
4 oz deli smoked turkey, sliced thin
2 - 3 pieces bacon, cooked (preferably applewood smoked bacon)
1 slice cheddar (preferably smoked cheddar

In a saute pan, melt the butter. Add the apple and red onion, and saute until it is limp. Set aside and keep warm.

Mix the mayo with the sage and set aside. This is best done a day ahead.

Preheat a griddle or large, flat, cast iron skillet. Spread one side of each of piece of bread with some butter. Place into the skillet, buttered side down. When it's toasted, remove, and spread the mayo over the untoasted side. Place the turkey in the pan for a minute or two. Flip. Once the meat is hot, place the meat on one piece of bread. Lay the bacon over the turkey. Set the cheese on top of the meat, then place the apple/onion mixture over that. Cover with the other piece of bread and enjoy!
